I have such a long day ahead of me today, guys but bloggers gonna blog 😛 Besides, my day has been made already at this AM by the breakfast recipe I’m about to share with you.
Just as I was watering my fig tree yesterday, I knew that one of the fruits on the tree would be ripe enough today. With only one fruit, I thought it’d be a good idea to make overnight oats and use the fig to top it. Along with some other toppings, of course, because I’m greedy!!
Last night I made the overnight oats base with some almond milk, chia and honey (love my fig and honey combo!) Then, this morning I just topped the creamy oats with my freshly-picked fig, some cherries, brown rice flakes and almond butter. It turned out as amazing as I expected.
And don’t get me started on that dollop of almond butter, please. PERFECTION is the only word that can describe this breakfast bowl. THIS, together with the fact that today is Thursday and that we’re getting a long weekend here in Thailand this week just sent me to heaven. If you have 5 minutes, you can try this super easy fig and honey overnight oats and send yourself to heaven, too.

Overnight Oats with Almond Butter, Brown Rice Flakes, Cherries & Fig Recipe
Healthy and creamy overnight oats made with rolled oats, chia seeds, honey and almond milk and topped with almond butter, brown rice flakes, cherries and fig. The best make-ahead breakfast ever!

- ½ cup rolled oats
- 1 tablespoon chia seeds
- 1 cup almond milk
- 1 table spoon honey
- Almond butter, brown rice flakes, cherries and fig for toppings
- Combine rolled oats, chia seeds, honey and almond milk in a jar and refrigerate overnight.
- Top with a tablespoon of almond butter and brown rice flakes, a few cherries and pieces of fig when ready to eat and enjoy!
