    Overnight Oats with Cacao Nibs

    Packed full of nutrients, these overnight oats with cacao nibs are healthy and very easy to make. It contains oats, chia seeds, bee pollen, soy milk, blueberries, brown rice flakes and cacao nibs - clearly the powerhouse breakfast you need at the start of your day!

    Overnight Oats With Cacao Nibs

    Hands up if you're one of those who rush out the door and end up having no breakfast most mornings! I love food so much that I'm literally never that person. But do come in for a group hug because I have a non-stressful solution in the form of nutritious overnight oats for you.

    I know it's been a while since overnight oats became a thing. But in case you're still reluctant to try them for whatever reason, I'll risk being annoying and tell you you should definitely try them! Before I go on or you run away, check out my almond milk overnight oats recipe pretty please. 😆 That recipe is delicious and super satisfying!

    Now, in all seriousness, overnight oats ARE such a great grab-and-go breakfast that is also very healthy. I find overnight oats perfect for me on days I go to the gym in the morning. Why? Because I can prepare them in advance, eat them as soon as I get up and let my body digest them before I actually start doing my workout.

    And the recipe I'm sharing with you today is overnight oats with cacao nibs, an easy and healthy cacao nib recipe. It contains many healthy ingredients, namely oats, chia seeds, bee pollen, soy milk, blueberries, brown rice flakes and cacao nibs. Without a doubt, these ingredients make this overnight oat recipe a great powerhouse breakfast that will get your brain going early in the morning!

    What Are Cacao Nibs?

    Cacao nibs, also known as cocoa nibs, are dry cacao beans or dry cocoa beans crushed into small pieces. These raw cacao nibs are like natural chocolate chips - only without any sugar or unnecessary additives. Cacao nibs have a strong chocolate flavor and crunchy texture. They're packed full of nutrients, antioxidants, fiber, iron and magnesium. Although slightly bitter, they go well with other things such as those included in this recipe.

    How To Use Them

    There are so many ways you can enjoy or use cacao nibs. For example, you can simply eat them raw by using them as a topping for your overnight oats (just like this recipe), your favorite yogurt, cereal or even salad. Also, you can blend them into a smoothie (one with banana as the main ingredient is a great choice!).

    Some people use them in their baking as well. Think cacao nib cookies, biscuits or banana bread. YUM!

    Where To Buy Them

    You can find raw cacao nibs or cocoa nibs in most health stores or the "healthy food" section of your nearest supermarket. If you can't find them there, then order them online here. They're not cheap or expensive, but the nutrients they provide are absolutely worth the price.

    Ingredients

    • ½ cup rolled oats
    • 1 tablespoon chia seeds
    • ½ tablespoon bee pollen
    • 1 cup milk (any kind you want)
    • 8-10 blueberries
    • 1 teaspoon brown rice flakes
    • 1 teaspoon cacao nibs

    Instructions

    1. Combine rolled oats, chia seeds, bee pollen and milk in a jar with a lid or an airtight container and refrigerate overnight.
    2. Top with blueberries, brown rice flakes and cacao nibs the next morning or when ready to eat and enjoy!

    NOTES:

    If you find the consistency of the oats in the recipe below too thick or runny, you can adjust it by using less or more milk. Remember you can use any kind of milk you like. Also, the overnight oat base will keep in the fridge for about five days, which means you can prep five jars of it in advance on Sunday and have your breakfast sorted for all the weekdays!

    And don't even worry about feeling bored eating the same food every day because you can switch up the toppings. You can use ANYTHING you have or anything you want. While I prefer to add my toppings when I'm ready to eat the overnight oats, some of them can be added the night before, but this really depends on what you use. If you're using fresh fruit, I recommend adding it when you're ready to eat.
