    Thai Green Curry Spaghetti

    Thai green curry spaghetti is a quick fusion dish that is delicious and easy to cook. If you’re looking for something to cook for a midweek dinner or a date night, give this recipe a try!

    Why We Love This Thai Fusion Pasta Recipe

    Love pasta and Thai green curry? Why choose when you can have both in one dish?! This Thai chicken green curry spaghetti is full of flavor and you can whip it up in less than 30 minutes (given you have all the ingredients :P).

    The spices in the green curry paste is what makes the sauce special. After a long day at work or school, this is what's going to make your day. You can meal-prep the dish on the weekend and reheat during the week as well.

    This Thai fusion spaghetti is not something you have to sit and eat by yourself only. If you're planning a date night or you have people coming over, you can cook a large batch to serve them. Just increase the quantities of the ingredients proportionately and you'll be the star of the evening. Oh, and you can elevate this dish by topping it with these crispy fried shallots!

    Ingredient Notes

    Thai Green Curry Paste: If you have a bit more time or are up for a good arm work out, you can make my green curry paste! You can make it ahead of time and store it for use later.

    If you don't have the time, I recommend using this green curry paste which you should be able to find in any Asian grocery store or online.

    Chicken: I use the breast in this recipe, but you can use any part you want or oven switch to another type of meat.

    Spaghetti: You can use either freshly cooked or frozen cook spaghetti. The reason why I didn't add the spaghetti cooking time to this recipe is because I often use frozen cooked spaghetti to whip up a dish.

    Pasta Water: Again, if you use frozen cooked pasta, you may not have any paste water. In this case, you can use a simple vegetable or chicken stock.

    Step-By-Step Instructions

    Step 1: Heat the oil in a pan over medium-low heat.

    Step 2: Add the green curry paste to the pan and fry until frangrant.

    Step 3: Add the chicken and stir to mix with the curry paste until cooked.

    Step 4: Add the cooked spaghetti and stir to mix everything together.

    Step 5: Add the pasta water.

    Step 6: Add the coconut milk.

    Step 7: Season with a pinch of salt and stir to mix everything well, making sure that all the noodles are coated with the green curry sauce.

    Step 8: Add the basil leaves and stir until wilted.

    Step 9: And the chilis and stir for another minute. Then remove from heat and serve immediately or store in glass food containers.

    Tips

    1. It's a great idea to cook spaghetti and divide it into portions and freeze it. This makes it so much quicker to cook this dish.
    2. Make sure to mix all the ingredients well so that each noodle is coated with the green curry sauce.

    Storing and Reheating

    I've stored this curry pasta in a refrigerator before and I think it still tastes good once reheated, although a little dryer. For leftovers, store in glass food containers for up to 2 days and microwave for 1 minute to reheat.

    • 6.5 ounces chicken cut into bite-sized pieces
    • 7.1 ounces spaghetti cooked
    • ¼ cup pasta water or vegetable or chicken stock
    • ¼ cup coconut milk
    • 1 pinch salt or to taste
    • 1 cup basil leaves
    • 3 red chilis sliced

    Instructions

      I often use leftover curries and spaghetti for a quick lunch. Surprised there is no coconut milk in this recipe. Enjoyed Nart's comment about the various vegetables some restaurants add to their curries. Having been born and spending most of my childhood in Thailand , Makua Puong is the only vegetable that should be added to Green Curry. I also chuckle when I see "Pork Massaman Curry" on some restaurant menus .

        Thanks for your comment. There's coconut milk in this recipe. It's in both the recipe and pictures 🙂 Interesting about pork massaman because my mother does make it but she would cut the pork into large chunks. I think pork massaman is pretty common though?

          Massaman is "Muslim" and pork is not eaten. I grew up eating only Beef Massaman but have used chicken lately which is quite good. I must have missed the coconut milk. Enjoy your recipes.

          Massaman is a Thai curry. I understand Muslims do not eat pork but the curry isn't "Muslim" though. 🙂
