    Long Bean Stir Fry with Bacon

    This long bean stir fry with garlic and bacon is a very quick and easy side dish. It’s tasty with rice and ready in just 10 minutes. Perfect for a midweek dinner!

    Why This Recipe Works

    Long bean, also known as, yardlong bean, Chinese long bean and asparagus bean, is a vegetable with many health benefits. For example, it’s a great source of antioxidants and loaded with protein, iron, phosphorus, potassium and vitamin A. It is easy to find and fairly cheap in Southeast Asia.

    Stir-fried long beans is one of the easiest Thai recipes with long beans. It takes just about 10 minutes to put together, making it perfect for your dinner after a busy day at work. If you have the time, you could have it with another quick side dish such as Thai omelette, Thai red curry with mushrooms, and maybe a glass of simple blue butterfly pea tea.

    Ingredient Notes

    • Long Beans: These are not to be confused with green beans. But if you can’t find them, you can definitely use green beans instead.
    • Bacon: You can use any types of bacon you like or even eggs or other types of meat. Note that if you’re not using bacon, you might want to start by heating some oil and frying the garlic. After that, do the meat, beans and soy sauce.
    • Soy Sauce: I highly recommend the brand in the link provided. However, I know that some of you may be allergic to soy or not a fan of soy sauce. In that case, feel free to season the stir fry with salt.

    Step-By-Step Instructions

    Quick Tip: For efficiency preparing this recipe, rinse the green beans under running water cut both ends off. Then, chop them into one-inch long pieces. Similarly, cut the bacon into bite-size pieces.

    Once everything is ready to go, the stir frying should take just about 5 minutes!

    Step 1: Heat a wok over medium heat and fry the bacon until it stars to brown and has released the fat.

    Step 2: Add the garlic and stir until fragrant, about 30 seconds.

    Step 3: Toss in the green beans.

    Step 4: Add soy sauce and continue to stir for about 2 minutes. Then, remove from heat and serve with rice or anything else you prefer.

    Pro Tip:

    Although it’s an easy dish, still there’s a secret to making this stir fry great, which is not adding any water to it when cooking!

    I know adding water may sound weird to some from different cultures but many Thais do add water to their vegetable stir fries. Even I do that sometimes. But not with this baby, babe. With no water, the long beans will be coated in fat and their texture and shape stay nice longer.

    Storage

    This dish is best enjoyed freshly-cooked. I don’t recommend storing and reheating at all. Though, if you don’t mind sad-looking, soggy beans, then you can store it in an airtight container in the refrigerator for a day and reheat by microwaving at the highest level of heat for 2 minutes when ready to eat.

    • 4 strips bacons cut into bite-size pieces

      What a simple, yet flavorsome, recipe. I am glad I discovered your blog. I visited Thailand some years ago and had the best time of my life there. Previous to my visit I never had thai food, so it was a blast! I am Mexican and loved the spiciness, simple way of cooking with fresh ingredients, all things you can find in Mexican cooking (just not in the Mexican-American recipes lol).
