    This Thai garlic fried rice is one super easy side dish that can be whipped up in 15 minutes. It's got that umami and garlicky flavor that's so amazing when paired with vegetable stir fries or grilled meats. Easily everyone's favorite side!

    Why We Love This Recipe

    If you're a fan of fried rice, this is one recipe not to be missed. First of all, it's very easy to make. Second of all, it requires only a few ingredients which you should already have in your pantry if you cook Asian food.

    And once you've got all your ingredients prepared, it takes no more than 15 minutes to cook this super delicious Thai garlic fried rice. And guess what, it reheats well so you can cook it in a large amount and eat for the next couple of days.

    Another reason to love this easy Thai side dish is that it pairs well with just about anything. From long bean bacon stir fry, water spinach stir fry, Thai holy basil chicken, to Thai grilled pork --- you name it.

    And with its nice garlicky flavor, you might want to wash it all down with Thai iced tea or Thai pink milk to complete the meal. Honestly, this is all you need for the perfect Thai night in!

    Ingredient Notes

    • Oil: I use canola oil but you can use vegetable oil as well.
    • Rice: We need cooked rice here. Always cooked rice for fried rice!

    Step-By-Step Instructions

    Step 1: Add the oil to the wok over medium-high heat and heat for about 2 minutes.

    Step 2: Add the minced garlic and stir until slightly golden.

    Step 3: Add the diced carrots and stir until the carrots are cooked.

    Step 4: Add the rice. Break any clumps with the spatula and stir so that garlic and carrots are well scattered.

    Step 5: Season with soy sauce and continue to stir until everything is well mixed.

    Step 6: Add the green onions and use the spatula to mix with all the other ingredients. Turn off the heat and serve the rice right away.

    Tips

    1. Don't use freshly cooked rice or it will end up clumping or mushy. In fact, it's best to used leftover rice from the day before.

    2. Wait until the oil is hot before you start frying the garlic. But don't use high heat because it burns very easily.

    3. You can save green onions to use as a garnish when you serve the fried rice.
