Ingredient Notes
Shallots: Use red shallots and don't sub them with onions. Their flavors are different.
Gogi Tempura Flour: Gogi is probably the most famous tempura flour brand in Thailand, but you can use any brand available to you.
Salt: Use just enough to add a bit of saltiness to the shallots.
Instructions

Step 1: Peel and slice the shallots thinly and evenly.

Step 2: Place all the sliced shallots on a paper towel. Then, cover with another paper towel to remove water. Set a side for about 10 minutes.
Step 3: Mix the tempura flour with the salt.
Step 4: Put the oil in a pan over medium heat.

Step 5: After setting aside for 10 minutes, put the shallots in a bowl. Add the flour and use your hand to mix the flour with the shallots.
Step 6: Once the oil is sizzling, add the shallots to the pan and fry until golden before flipping. Continue to fry until the shallots are golden brown on all sides.
Step 7: Use a slotted spoon the remove the shallots from the oil and place over a bowl to drain the excess oil and let cool.
Step 8: Once the shallots are completely cool, store in an airtight container.
Tips

1. Be careful not to use high heat as the shallots will burn very quickly.
2. Removing the excess oil after frying helps extend your crispy fried shallots' shelf life.
3. Don't discard the oil after frying. You can use the shallot-scented oil to make a stir-fry. It'll taste beautiful!
Storage

Store the cool crispy fried shallots in an airtight jar where it will stay good for up to 1 month.
