  1. Heat oil in a pan or pot over medium-high heat.
  2. While the oil is heating, crack the egg into a bowl, add fish sauce and chopped green onion if using and beat with a fork.
  3. Once the oil is lightly smoking, pour the egg mixture into the center of the pan and cook for half a minute.
  4. Flip the egg with a spatula and cook the other side for another half minute.
  5. Serve the omelet on rice with Sriracha sauce and enjoy!
