Avocados are expensive stuff. Every time I see them on sale, I can’t help but jump for joy. But that joy used to end as soon as I realized I had too many avocados ripening at the same time. However, I’ve found the ultimate answer for us all.. and that’s crispy baked avocado fries!

Baked Avocado Fries

If you’re sick of the avocado toast you’ve been having for four days in a row and you’re still nowhere near finishing those avocados that are about to go bad, you need this baked avocado fries recipe in your life. Served with ketchup or any dipping sauce of your choice, these fries are a perfect afternoon snack. Or even a perfect party food…if you’re willing to sacrifice 3/4 of your salary. Not to mention that they’re so easy to make and only need about 20 minutes in the oven. Keep in mind that although these fries are packed with nutrients and are a healthier alternative to french fries, avocados are naturally high in fat. Regardless of the fact that it’s good fat, avocados should still be consumed in moderation.

I’ve never seen a recipe like this for avocado. Is it better if you use avocados before they are completely ripe, so they don’t fall apart in the oven? It seems that the California avocados, which I try to buy as much of as I can, would be pretty soft when ripe.

I used a ripe hass avocado (which I think is the same as the ones you get) and it worked pretty well. 🙂
